Hello everyone!
Yesterday I decided to make a traditional pie from Epirus,Greece. This pie is a thin crust pie, containing ingredients that make you feel full. This,to me, is my comfort food!
I've watched my grandma and mom make this SO many times growing up-I thought it was about time I recreated it. I hope you will too!
So here's the full recipe:
INGREDIENTS
- 500 gr all purpose flour
- 3 eggs
- 200 gr greek yogurt
- 750 ml water(room temperature)
- 70 ml extra virgin olive oil
- 300 gr(or more if you please) feta cheese
- 50 gr Reggato cheese(optional)
- half a tomato, sliced
- salt and pepper
FULL RECIPE
- mix flour, eggs, water, salt, pepper and use a whisk to incorporate all the ingredients. Your batter should end up with a runny consistency!
- pour the olive oil on a flat baking tray and spread it all over the surface.
- put the oiled tray in a preheated(180°C) oven for a couple of minutes. It should come out warm
- take your tray out of the oven. Pour the batter over the warm oil and spread it with a spatula if needed.
- Crush the feta cheese with your hands(or a fork) and spread it evenly on top of the mixture.
- Add the thinly sliced tomato on top.
- Add the Reggato cheese(again, this is optional. We just love cheese)
- Time to bake! Put your tray in the preheated oven at 180°C for about half an hour
- ENJOY!!
Tip 1: you can skip the tomatos and the reggato cheese.
Tip 2: you can make sure your pie is ready if you see that golden color on top. That color means SUCCESS!!
Tip 3: If you want to make sure it's really crunchy you can use a knife or fork to check if your pie lifts from the bottom of the baking tray while in the oven!
