Merry Christmas to the whole Hive community!
Christmas Eve was the right occasion to prepare a light seafood dinner to treat us a little bit. We all agreed to prepare some of our preferred recipes and since we want to have a light dinner it was a combination of different, hot and cold, entrees.
It was all about sea food. We started with gratinated Jacobs muscles (prepared in oven with parmesan cheese, garlic, breadcrumbs and olive oil).
To follow with marinated fresh shrimps. A very simple recipe for a gourmet experience. Fresh shrimps with olive oil, salt and lime juice. Spread on top with red pepper and toasted sesame seeds.
Tuna tartar with sashimi tuna, mustard, olive oil, salt, pepper, lime juice and few capers.
Cold spinach omelette with sour cream, salmon and feta cheese.
All was served with home-backed sour-dough bread and homemade crispy Scandinavian crackers.
There is no perfect dinner without good wine. We choose excellent local sparkling wine.
