The origin of Beef Pulao can be traced back to the Middle East, where it was a staple food for nomadic tribes. These tribes would carry bags of rice and spices with them as they travelled, and they would use these ingredients to create meals over open fires. As they travel through different regions, they would incorporate local ingredients and spices into their dishes, creating a variety of regional variations of pulao.
As trade routes expanded and different cultures came into contact with one another, the dish was introduced to other parts of the world, including India and Pakistan. Ingredients:
1 lb beef, cut into small pieces
2 cups basmati rice
1 onion, chopped
4 cloves garlic, minced
1 inch piece ginger, grated
1 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp turmeric
1 tsp cinnamon
1 tsp paprika
Salt and pepper, to taste
3 cups chicken broth
1/2 cup raisins
1/2 cup slivered almonds
1/4 cup ghee or unsalted butter
1 pinch of saffron threads
Instructions:
In a large saucepan, heat the ghee or butter over medium heat. Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
Add the cumin seeds, coriander seeds, turmeric, cinnamon, and paprika and cook for another 2 minutes until fragrant.
Add the beef to the pan and cook until browned on all sides, about 10 minutes.
Add the rice to the pan and stir to combine with the beef and spices. Cook for 2-3 minutes until the rice is lightly toasted.
Add the chicken broth, raisins, almonds, and saffron threads to the pan and bring to a boil.
Reduce the heat to low, cover the pan, and simmer for 15-20 minutes or until the rice is tender and the liquid has been absorbed.
Serve the beef pulao hot, garnished with cilantro, if desired.
