Today I cooked it into chili sauce, I cooked anchovy petai chili sauce.
Anchovy petai chili sauce
This is my family's favorite chili sauce. A few months ago I opened a business selling chili sauce online. Petai anchovy sauce is one of the products that I make.
At that time I made several kinds of various kinds of chili sauce. I have stopped selling this chili sauce for about twelve months. The reason is because it is very tiring and the price of ingredients is getting more and more expensive, making me give up on continuing, while consumers always want cheap prices with good taste. This It's not worth all the ingredients and the fatigue I feel.Actually, my online shop has grown quite a bit, but because I was not patient, my business stopped.
Actually this is not my first attempt, I've tried various kinds of business but in the end they always fail and can't run smoothly.
Why is making sauce so tiring? Because when making it, we have to do several processes, moreover, the sauce sauce that I produced at that time was not only one type. So if there are many orders it will be very tiring for me. The sauce ingredients that I puree manually are what make me very tired, because if we blend the chili ingredients using a machine it will affect the taste of the sauce.
People who have eaten this sauce always ask, "Is there a secret ingredient in every dish I cook, why does it always taste good?" I replied that there was no special seasoning in this dish, I just cooked it using common and easily available ingredients.

INGREDIENTS
Any type of anchovy, to taste.
Garlic to taste.
Red Onions to taste.
Curly red chili and red cayenne pepper to taste.
Bay leaves, lime leaves, galangal, and lemongrass to taste.
Sugar, water, salt and seasoning to taste.
Map according to taste.
The oil for frying,Tomato and powdered broth to taste.
Sorry I wrote this recipe with the word to taste, you can prepare the ingredients according to your taste. Before starting to cook make sure all the ingredients have been washed thoroughly.
HOW TO MAKE
Step 1
Fry the chilies, tomatoes, garlic and red onions.
Step2
Fry the anchovies until dry.
Step 3
Puree the ingredients that have been fried, add salt, flavorings and sugar to taste.
Step 4
Heat cooking oil in a frying pan, then saute the ground spices. Add salam, lemon grass, galangal and lime leaves. Saute the spices until fragrant.
Step 5
Add the petai, powdered broth and enough water.
Step 6
Finally, add the fried anchovies. Next, cook until cooked and don't forget to correct the taste so that the taste of the dish is according to our taste.
My tips when making chili sauce like this are not to add too much water, and add more oil so that the sauce doesn't go stale quickly. Lemongrass is also very useful in preserving this chili sauce because lemongrass serves to make the sauce not easy to mold. Sambal that we cook well for half an hour will produce a sauce that lasts for four to five days.I use lime leaves, bay leaves and galangal to make this chili more fragrant and delicious when eaten.
