Coconut Rice and recipe 😊
Ingredients:
rice
coconut
plantain
mackerel fish
gizzard
onion
Stock fish
pepper ( different kinds of pepper, yellow, red and spicy pepper
crayfish
seasoning cubes
Ginger
Garlic
Salt
Vegetable oil (for frying the plantain and stir frying the protein, I didn't add it in the rice, coconut has its own oil, and extracted when cooked)
Step1: remove the shell of the coconut and blend. after blending you boil warm water, soak for five minutes and sieve
N/B it's the water you sieve from the coconut you'll use and not the charf
Step2: parboil your rice with a drop of vegetable oil, cook till it's half done.
Step3: parboil your protein (gizzard, meat, stock fish) parboil with a pinch of salt, one seasoning cube, onions, blended garlic, pepper and ginger.
N/B it's little quantity of the items mentioned above you'll use to parboil your protein.
Step4: pour the water you extracted from the grinded coconut inside pot, add the little water from the steamed protein and stir.
Step5: Allow the water to boil for 3 minutes then you add your parboiled rice, pepper, onions, crayfish, seasoning cube, ginger, garlic etc. cook til the rice is soft.
Step6: from your plantain and protein.
your delicious coconut rice is ready for you to devour 😊
