From a delicious dip to a Ratatouille to a delicious cake. Eggplant is a super food that can be used to make so many recipes. This recipe is my mom's and I really love it. Since she was a little girl, my mom has always delighted us with her exquisite and above all tasty taste for food that I happened to inherit. My husband is really happy that I cook like my mom because he has tasted many of her dishes and has been amazed by them.
Here I share with you one of her richest and best recipes. Get pencil and paper and sign up for a change in your meal preparation routine for the week.

- 3 Berenjenas.
- 300 grs de carne o pechuga de pollo.

Para la bechamel:
- 1 vaso y ½ de leche líquida.

- 2 cucharaditas de harina de trigo.
- 1 cucharadita de sal
- 2 cucharaditas de azúcar.
- pimienta y nuez moscada al gusto.
For the béchamel sauce: 1 glass and ½ of liquid milk, ¼ of an onion chopped in Julienne, 1 teaspoon of butter, 2 teaspoons of wheat flour, 1 teaspoon salt, 2 teaspoons of sugar, Pepper and nutmeg to taste.

Select Eggplants that do not have holes and have a nice skin. Chop them in half and try to remove the food but leave a little layer so that they have consistency when you pour your meat stew or chicken over them.
Step two. You can use meat 🥩 for larding, ground beef or minced meat in small squares as well as chicken🍗 you parboil it, grind it or chop it into small squares. The food you take out of the Eggplant 🍆 chop it into small squares and you will cook it with your meat or chicken stew and you will blend ½ paprika and ½ onion or 5 sweet peppers and 2 sprigs of chives. For the meat, the spice that gives a good flavor is cumin and for the chicken, turmeric. And add salt to taste. The stew should be half dry because remember that when you pour the béchamel sauce into the canoes, it will hydrate the meat.

Step three. I grab a teaspoon of butter with two teaspoons of wheat flour and with a whisk I start beating. I can't go without pepper and nutmeg, but if you don't have either, it doesn't matter. You also add salt to taste and two teaspoons of sugar and keep stirring over medium heat until the cream thickens, turn off and let stand.

Place your empty eggplant canoes and add a spoonful of bechamel sauce to each one, fill them with your stew, add a layer of bechamel sauce and top with parmesan or hard cheese. Bake them in the oven for 30 minutes at 180 degrees so that the cheese is nicely gratinized on top. Let them rest and then enjoy.
Note: You can put slices of fried plantain on top of the meat and then the bechamel sauce and cheese. Bake them in the oven until golden brown on top and that's it. I served them today with baked sandwich bread with garlic and parsley butter. But you can serve them with any kind of topping and they will be delicious.
