I prepared some delicious jollof spaghetti today after very much contemplation of whether to make jollof rice.
Jollof spaghetti can be an alternative to the popular Nigeria/west African Jollof rice. It is way faster to cook compare to the Jollof rice
INGREDIENTS
- Spaghetti
- Habanero Pepper
- Canned Brown Beans (Optional)
- Tomato Paste
- Vegetable Oil
- Curry Powder
- Thyme (Dried)
- Chopped Onion
- Salt to Taste
- Maggi
PROCEDURE
Cook your spaghetti until firm to the bite or cooked rightly.
Place a pan on your cooker on low heat, add your vegetable oil followed by your chopped onion and allow to fry for about a minutes.
Add your tomato paste, allow to fry until it gets dried for about 3-4 minutes. Add little water and stir, followed by adding your blended habanero pepper, curry powder, dried thyme, brown beans, Maggi and salt.
Add little quantity of water to the sauce, stir and allow to cook for 2-3 minutes. Add your already cooked spaghetti to the sauce and stir very well. Allow to cook for a minute, switch off your cooker and serve.
