Hello everyone! Today is Monday and it's a good day to start a new day, new hopes and more plans with so much optimism for the future! It was my daughter's birthday last February 25 so she went home earlier to spend some precious moments with her daughter, Antonia. She said that that her old friends in mountain trekking requested my yummy "Betsuelas".
Actually, betsuelas is composed of white beans with meat and tomatoes. It is a favorite dish here even on special occasions. They liked how I prepared this delicious food hence they always look forward whenever we have an occasion at home:) Let me share it with you guys and see for yourself to experience it's goodness!
Betsuelas (White Beans)
Ingredients:
• 1 kilogram betsuelas
• 1 kilo pork, cut in bite size. The legs chopped circularly about an inch is preferable because the bones gives an additional savory effect.
• 1/2 cup cooking oil
• 1 clove garlic, minced
• 1 bulb onions, chopped
• 4 pcs bell peppers, chopped
• 1/4 kg. Ripe tomatoes, chopped
• 1 small pack tomato paste
• black pepper
• 1/8 kg. Brown sugar
• Salt & Seasoning to taste*
Preparation
- Wash the beans thoroughly and soak it with boiled water for at least 30 minutes.
- Prepare the frying pan. Pour cooking oil and saute tomatoes, onions and garlic stirring gradually until the tomatoes are mashed thoroughly then set aside.
For big preparation, I prefer to boil the beans in a big couldron over open fire instead of pressure cooker.
I let the water boil first. For 1 kilogram of white beans, 2 gallons of water would be ideal for tenderizing both the beans and meat.
. See to it that the beans are not burnt on the process. Therefore you need have enough amount of water to stir every now and then to prevent the beans from sticking down the base causing it to get burnt and destroy the aroma of the beans! Add more water if the beans are not tender yet until it is well done.
Next, pour and mix the sauteed spices along with the tomato paste, bell peppers and black pepper plus the brown sugar then add salt and seasoning to taste.
You will know that the beans are already well cooked once the beans break off. Take note that both the beans and meat are so tender already. Actually, the process took 4 hours but it's all worth it. For smaller volume, at least 30 minutes using the pressure cooker would be enough.:)
That's the finished product. See how yummy it looked like. I've set aside a bowl of betsuelas before they picked it up for their little party in one of our local restobar called "Rancho".
