Ingredients
Tomatoes - 5
Onions - 2
Coconut oil(2 tbsp), mustard seeds, 1 dried red chilly, curry leaves, and 2 or 3 green chilly for seasoning
Turmeric powder - A pinch
Salt
Water
Red chilly powder - 2 tsp
Spice mix - 1 tsp
Method
Slice the onions and tomatoes and heat the wok.
Heat the coconut oil and season the leaves, mustard seeds, and chilies.
Fry the onions a bit. Adding a pinch of table salt will help make it brown faster.
Add the tomatoes and stir a bit.
Add water, red chilly powder, and salt as needed. Let it cook well.
After the water is absorbed a bit, add the spice mix if you like. Spice mixes can be made by powdering cinnamon, black pepper, and cumin, and perhaps star anise.
Transfer to a serving bowl when done and garnish with coriander leaves.
This curry can be had with steaming hot rice or chapati or bread.
