When we think of desserts usually comes to our mind things like chocolate cookies, cakes with dulce de leche, or fried churros with lots of arequipe, all extremely delicious but not very healthy, especially if we are trying to lose weight or avoid eating very processed things. In my case, I have to avoid eating that kind of dessert because my health forbids it, so when I crave something sweet I usually try to choose recipes that are easy and with healthy ingredients that I can make at home, the carrot has become a great ally because it is not only very versatile either for savory foods or desserts, but also a great source of vitamins and minerals so necessary for our body. Coconut is another great ingredient when making desserts, since it is not only healthy but also adds a natural sweetness to recipes, helping to reduce the use of processed sugars.
Previously I had tried making cookies with these ingredients separately, but recently I decided to try to join them and get the benefits of both with only 1 dessert that besides being tasty, is low in sugar and does not contain egg or gluten, 2 things that have to be in most sweet recipes but are considered major allergens and many people can not consume them.
Ingredients
- 1 cup of Flaked Oatmeal
- ½ cup of oat flour (I use this because I am allergic to gluten, but you can use regular wheat flour)
- 1 carrot
- Coconut
5 tablespoons of sugar (you can replace with honey or grated panela) * 5 tablespoons of vegetable oil - 5 tablespoons of vegetable oil (can be coconut oil)
- Essence
- A Pinch of Baking Powder
Preparation
- In a bowl, grate the carrot and the coconut until you get a cup and a half of both ingredients mixed.
- Add oat flakes and mix well.
- Then add the oat flour and mix again.
- Place the 5 tablespoons of sugar and the baking powder.
- Once all the dry ingredients are integrated, add the essence and the vegetable oil.
- Mix with your hands until you obtain a homogeneous dough. Let it rest for approximately 10 minutes. While the dough rests we preheat the oven and prepare the mold where we will bake our cookies. I will use wax paper but if you don't have it you can grease and flour it.
*Once the dough has rested we make small spheres with our hands, the size depends on how big or small you want your cookies (I suggest moistening your hands a little to make the dough more manageable).
*Place in the previously prepared mold and flatten a little so that they are disc-shaped.
- Place the pan in the oven and bake for approximately 15 minutes or until golden brown.
- Remove from the oven and let stand until cool.
And now you can enjoy these delicious cookies. In my case I will do it with a hot coffee.
The good thing about this recipe is not only how easy it is, but also that it is suitable for everyone and very versatile since you can add any extra you can think of such as dried photos, chocolate chips, ginger or cinnamon, and much more, your imagination is the limit.
