In this recipe, I will introduce you to a beloved German snack called Milchschnitten, which means Milk Slice and produce by the Kinder company.
Milchschnitten is a thin layer of chocolate cake with a cream cheese honey-flavored filling and they fit well with this coming week's topic on Hive Top Chef, "Cream Cheese".
The package of Milchschnitten is very rare and hard to find in Thailand, and probably costs 10 times more than in Germany which is why I prefer to make Milchschnitten by myself.
It’s really easy to make these Kinder Milk Slices right from my oven. Of course, homemade versions are always better than store-bought. Because they don't contain additional preservatives, stabilizers, and chemicals as the Milchschnitten in manufactured versions.
They are mainly meant for kid's snacks but everyone in Germany loves them for all ages! I made my recipe for the Kinder Milk Slices by adapting a recipe from my German friend who handover this recipe to me and I made it several times and the outcome was absolutely delicious. It is quite a simple recipe.
The main ingredient of a kinder milk slice manufactured version is indeed milk and tiny cream cheese, but the second and third ingredients are palm oil and sugar, I think I can do better than that, right?
So my recipe is a kind of cake sandwich made from two layers of chocolate cake with a very delicious cream filling between the slices. That filling is icy cold but not solid frozen as ice cream and has a very unique taste. The main ingredient of the filling is cream cheese and a combination of whipped cream, honey, and icing sugar.
INGREDIENTS
FOR MAKING CHOCOLATE CAKES
- 200 Gram All-Purpose Flour
- 200 Gram Granulated Sugar
- 4 Eggs
- 120 ML MILK
- 100 Gram Canola Oil
- 1 Tablespoon Vanilla Extract
- 1/2 Cup Cocoa Powder
- 2 Teaspoon Baking Powder
FOR MAKING CREAM CHEESE FEELING
- 400 Gram Cream Cheese
- 80 Gram Icing Sugar
- 80 Gram Honey
- 100 ML Whipped Cream
- 20 Gram Icing Sugar
INSTRUCTIONS
STEP 1
Prepare the chocolate cake. Preheat the oven to 350F (180C). Grease and line with parchment paper a 12×16 inch (30x40cm) baking sheet. Then set the baking tray aside.
In a bowl of a stand mixer with the paddle attachment or with hand beaters, mix eggs with vanilla extract at high speed for about 1 minute or until slightly foamy and the egg is beaten to the yellow color. Then I need to add the sugar and d beat it until it is fluffy.
STEP 2
Add the oil and milk into the mixing bowl.
Whisk until can´t feel any sugar, thick, foamy, and light-colored.
STEP 3
Once it’s mixed, set it off to the side. Mix the dry ingredients. Whisk the flour, cocoa powder, and baking powder in a medium bowl until well combined. Then add the flour mixture into the egg mixture.
Then whisk until the flour is just mixed in and fully incorporated.
STEP 4
Pour and spread the batter evenly into the prepared baking sheet.
Bake for 10 minutes until a toothpick inserted into the center comes out clean.
After that cool the cake. And gently take away the baking sheet.
STEP 6
The original Milchschnitte is actually quite thin, so cut them in half and set them aside.
MAKING CREAM CHEESE FILLING
STEP 1
In a large bowl, beat together the honey and cream cheese with a silicon spatula. Then whisk them together until well combined.
STEP 2
In the same mixing bowl, add the icing sugar over the cream cheese and whisk them together until the icing sugar is melted.
STEP 3
In another mixing bowl, add the icing sugar over the whipped cream and whisk them together until the icing sugar is melted.
STEP 4
Add the whipped cream into the bowl of cream cheese mixture. Then combine them well.
FINAL ASSEMBLY
STEP 1
Lay the plastic wrap and place a cake layer over the plastic wrap. Then spread the cream cheese frosting on top of the chocolate cake layer.
STEP 2
Gently add the second layer of cake.
STEP 3
Carefully fold the plastic wrap over the Milchschnitten.
STEP 4
Place the Milchschnitten into the freezer and let it freeze a bit until the cream cheese frosting filling starts to be cooler and forms a bit.
STEP 5
Once the Milchschnitten starts to cool and firm, then cut the top piece of cake, and then cut the bottom into 10x5 CM. For the leftover Milchschnitten, wrap them with plastic wrap and keep them in the closed grass container, and possibly freeze them in the freezer for about a month.
FINISH AND ENJOY
Because it's made with so much love and also no artificial things are used like market snacks and everyone in my family loves this homemade Milchschnitten that simply melts in the mouth and is super yummy sweet.
