Salads are one of those things that just work. You can keep them simple, load them up, or mix in whatever you’ve got on hand, and they still come together. They fit any mood—light, filling, fresh, or bold... without making a big deal out of it. I like that they don’t need rules or fuss. They’re just versatile in the easiest, most natural way.

Let's make salad!

Ingredients:

You can use any vegetable you want... add greens, like green leag lettuce, or a mix of greens. Experiment!

I used a bunch of cherry tomatoes, 1 cup chickpeas, sliced or diced red onions as much or as little as you desire (I used white onions because I didn't have any), 3 hard-boiled eggs, which I diced, and 2 avocados, also diced.

First, make the dressing! Squeeze half a lemon into a bowl.

To it, add two tablespoons of olive oil; I used avocado oil.

Add salt and some ground pepper, black or white.

Then red chili/pepper flakes...

and use freshly chopped parsley; I used dry parsley.

And finally, a dash of oregano.

Mix all the dressing ingredients well!

Tossed the salad ingredients together. Be gentle in doing this!

Then pour the dressing over the salad...

and it's DONE!
