400-500 gr de cáscaras y pulpa (con semillas) de guayaba.
250-300 gr de azúcar blanca (depende del gusto de cada quien).
700 ml de agua.
1 pizca de sal.
1 toque de vainilla o sarrapia (opcional).
Una olla mediana, cuchara para remover, una licuadora, un colador, un bol, frascos esterilizados para envasar.
400-500 gr of peel and pulp (with seeds) of guava.
250-300 gr of white sugar (it depends on the taste of each one).
700 ml of water.
1 pinch of salt.
1 touch of vanilla or sarrapia (optional).
A medium saucepan, stirring spoon, blender, strainer, bowl, sterilized canning jars.
These are the guava peels and pulp that I reserved from the first preparation. As they were already chopped, they do not need to be crushed further. They don't look good since I had frozen them.
I put them in the pot to cook over high heat, in approximately 500 ml of water, along with the sugar and a pinch of salt. I cook over high heat and stir. I wait for them to boil which happens in about 7-8 minutes, stir to soften (an additional 25-30 minutes).
As it softens, I remove the fruit from the heat and wait for it to cool, then proceed to blend and strain. If it's too thick, I add more water to make liquefy easier.
Once the mixture is strained, I put it back on the fire, which has to be low as it tends to burn. It is also necessary to stir often to avoid sticking to the bottom of the pot. I cook for about an hour and a half, in order for the liquid to evaporate and acquire consistency. When the mixture is more consistent, I turn off the heat. I wait for it to cool down and proceed to pack. Bon appetit! ... and it is also ideal for making a gift.
