I was wondering what to share for our tradional food recipe. There are so many things to choose from. India’s diversity is not only evident in its multi-religious, multi-lingual people but also the vast variety of cuisines that Indians relish. Every 29 states of India have their own tradional or most loved food. That keep on serving on many plates over so many decades. (List of all 29 cuisines are mentioned at the bottom)
After a good thought, I finally choosed upon the most loved food recipe of our region - Litti Choka lifeline of Eastern India.
Have it in breakfast, take it in lunch , or enjoy it in evening snacks or saviour it in dinner. The item is also easily made. We also call the cuisines as "food for poor". This item can be made in two way, either bake it on coal furnace or deep fry it in oil. Those who cannot afford tye luxury of oil, then they simply make the roll, and put them in coal furnace to bake it. It require continuous watch and keep on turning the balls to avoid it from burning.
This item can easily be combed with, Chicken, Mutton, ketchup, Green Chuyney, however the main famous item and more cheaper is Choka which is made up of boiled potatoes and mixed with Chopped onions and tomatoes.
The main ingredients for the items that is required to prepare is Litti. The small flour balls baking on top of coal furnace are stuffed with Sattu which is nothing but Gram Floor powder.
This item is also considered to be very nutrients as **Sattu is reach in protein. To make Litti we need following ingredient, which are easily available at home.
- Salt
- Chopped Garlic
- Chopped Chillies
- Oil to fry
- Ajwain ( Bishop weed)
- Kneaded Flour
We mix all the material in "Sattu" and keep it seperatelly.Sattu (powder Gram floor) is one of the most famous item of our area and can be found easily at every corner of the road.
To prepare the small balls, firstly, We take small rolls of kneaded floor and make a cup shape of it. Fill the cup with little quantity of "Sattu" mixed with all the ingredient and cover it completelly.
Then put the oil in a frying pan and place the balls one by one. In case, you don't want to oil fry the balls, you can simply put them on any coal furnace and let it to bake. You can apply Pure Ghee or Buttwr later on.
Let the balls to deep fry in slow flame. Once the ball start turning brownish, we are ok to remove them from.oil and place them on paper napkin to soak out tye excess oil.
We are ready to serve our tradional recipe. You can combined these deep fried balls with Choka or any other chutney you have at home. You can it with Tea as a snack items.
As said earlier, this is most loved and easily made food item of Eastern India. Especially, Bihar , Jharkhand, and Uttar Pradesh. The main item is the ingredient that was stuffed inside the kneaded wheat floor. Be it any ocassion, and people don't hesitate to serve it.
No matter where you stay there is always that one particular food item that will remind you of your hometown,- one delicacy that defines ‘home’ for you. And Litti Chokha is stands for same for me. I am fond of this item and one of the most loved food item of our region. It has been savored through many decades and still a common and most loved food item. Hope you enjoyed the food recipe.
