I immediately placed the beef bones, which were very good because this time they had a lot of meat, in a pot over high heat with water. I added the scallion, chili pepper, celery, garlic, onion, and carrot, and salt so the flavors would develop. I added enough water so the meat would cook thoroughly.

When the carrot, scallion, and onion were soft, I put them in a blender with a little of the broth, and then I added that blended mixture and the bouillon cube. I let the bones continue cooking.

Then I added the diced vegetables so they would cook better. And then, when the meat on the bones was nice and tender, I added the vegetables and more water until they were covered, and let it cook until they softened.

Once the vegetables were nice and soft, I added the other celery stalk and the cilantro, turned off the heat, and let it rest before serving.
