Hello everyone, how are you all doing on this Friday night, kicking off the weekend? Tonight I'm going to show you how I made these chocolate cakes in individual trays. This time, I wanted to try adding not only the same ingredients as my usual chocolate cake, but also chocolate syrup to make a moist chocolate cake with that extra chocolate flavor. This is a way for you to see how my business is progressing, and also to show you how I make chocolate cake, especially when it's in individual portions, making it a more convenient option for baking and serving.

Preparación/Preparation
Paso 1
Step 1
This time I wanted to try a different way of making this cake, so I started adding the eggs and sugar to a bowl and began making a fluffy mixture, well, beating until I reached that point. If you have a mixer it's easier and faster, but if you have a whisk like me, it takes quite a bit of arm strength and stamina to do this. Once the mixture was somewhat risen, I added the vanilla.
Paso 2
Step 2
Next, in this step, I used a different method to hydrate the cocoa and activate the dark color of the chocolate. This is usually done with vegetable oil, but I had butter, so I melted it in warm water and then added the chocolate. It worked just as well. I added the chocolate to the mixture and stirred until it was well combined.
Paso 3
Step 3
Continue adding the flour, which you should sift through a strainer, and add the baking powder all at once, then gradually add the milk. Stir, but not too constantly, so the mixture doesn't lose its fluffiness.
Paso 4
Step 4
Then I prepared the trays, to start adding the mixture and then I put them in the oven to cook for at least 10 minutes at medium-high heat, because this type of cooking in trays is fast.
Paso 5
Step 5
Then I moved on to making the filling mixture, which is the same one I always make. In a pot, I added the cornstarch, sugar, cocoa, and milk, then cooked it over low heat. As the mixture heated up, it thickened, and when it reached the right consistency, I let it cool while I moved on to the next step.
Paso 6
Step 6
For this step, I made a syrup, but this syrup requires a tablespoon of cocoa powder, which I had left over from the filling mixture. The cocoa I use is good quality, and in large quantities, it's very bitter. So, in a separate saucepan, I put 50 grams of sugar and added about a small glass of water to the sugar and let it dissolve. Then I added the milk and the cocoa powder, mixing it with the sugar water, and then removed it from the heat. That's how I made this syrup, which is basically a very sweet chocolate mixture and is somewhat thick.
Paso 7
Step 7
At this stage, I had to fill the cakes, so I unmolded each one, cut it in half, and added syrup on one half of the cake. Then I added the chocolate filling, placed the other half of the cake on top, added more syrup, added some of the filling as a topping, and a little bit of chocolate sprinkles as a final touch.

So, what did you think of this recipe? I hope you liked the syrup idea. I also hope this idea of baking cakes in trays inspires you to start a small business. The aluminum trays prevent the cakes from sticking, they turn out beautifully, they don't burn, they cook quickly, and best of all, they double as cake containers, making them more useful for improving recipes and adding convenience. Also, since I made a fluffier batter this time, I had enough for 8 cakes in total. Thanks to everyone for reading this post, see you soon! 👋
