Oh my! These muffins are so moist, sweet, and delicious. You will definitely enjoy making these for your family and of course, some extras to share with friends.
Apple Muffins
This recipe states to add diced apples into it, but of course, I had a few blueberries left over and I just had to include them too. ;-)
Apple Muffin Recipe
Ingredients:
1 1/2 cups diced Fuji apple (from 1 [8- to 9-oz.] apple)
1/2 cup granulated sugar
2 cups all-purpose flour
1/3 cup packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup whole milk
1/2 cup salted butter, melted and cooled
1 teaspoon vanilla extract
2 large eggs, lightly beaten
Directions
1- Preheat oven to 400°F. Lightly grease a 12-cup muffin pan with cooking spray or line it with baking liners.
2- Place apple and granulated sugar in a medium bowl; toss to coat, and let stand for 10 minutes. Meanwhile, whisk together flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.
3- Stir milk, melted butter, vanilla, and eggs into apple mixture; add to flour mixture, stirring until just combined. (I added a few blueberries at this point)
4- Divide batter evenly among prepared muffin cups.
5 -Bake in preheated oven until a wooden pick inserted in the center comes out clean, 18 to 19 minutes.
6- Cool in pan for 3 minutes; remove muffins to a wire rack, and let cool for 15 minutes to serve warm. Or let cool to room temperature.

The muffins are delicious with the apples by themselves but adding a few blueberries gave them a whole new dimension. I did double this recipe so that I could put some of the muffins into the freezer for future use. I am always prepping extra food for my family to have on hand.
