Pecan Cinnamon Sweet Rolls (The cheat for those of us who are short on time)
YUP I cheated! I have no issue with making my own dough, but when I am limited on time, this is my go-to process that tastes yummy..
Let's face it, creating sweet bread dough is very ... did I say very? VERY Time consuming.... So being the crafty woman that I am, I began developing shortcuts that allowed me to create a tasty treat without spending hours on the dough side of the process.
Alright, my secret is to buy pre-made dough from the market (you can find the dough in the frozen isle of the supermarket.
I use this particular brand (it never seems to miss on the raise)
To get the ball rolling, I set out 1 loaf of the dough on an oiled pan to begin the thawing process.
Ingredients:
1 Rhodes bread roll
1/2 cup flour(to roll out the dough)
3/4 cup granulated sugar (you can use sugar replacement stevia)
3/4 cup of brown sugar (You can use the stevia version for this as well)
3 Tbsps of cinnamon
(mix the sugars and cinnamon together in a bowl.) (set it aside)
1 cup of butter set aside 1/3 cup (melted)
2 cups of pecans (give these a coarse chop)
Optional ingredient: Raisins
Once the loaf thaws and warms - with a rolling pin, roll the loaf out into a nice oval. Once rolled start spreading 2/3 cup of the butter over the top and then, sprinkle the sugar mixture over the dough as evenly as possible. (If you want you can add some more cinnamon via the shaker.) Add the pecans over the top of the sugar and cinnamon mixture (add your raisins at this time too) and locate the widest portion of the dough and begin rolling it up into a nice roll.
This is where you would begin cutting the dough into rolls and placing them into your baking pan. Before you decide to cut the dough with a knife, try using some dental floss to divide the dough into even sized rolls ... BEST TRICK EVER!!!
Once the rolls are cut and placed in the pan, drizzle the remaining 1/3 cup of butter over the tops of the rolls (they should look like the above photo).
Let the rolls raise for at least 30-45 minutes.
Preheat the oven to 425 degrees
Bake for about 30-45 minutes until golden brown. (They should look like the photo below)
Pull them out and let them cool, keeping them in the pan you baked in. Once cooled you can add an icing drizzle if you like (I included my recipe for my drizzle below).
Icing drizzle:
2 cups powdered sugar (use the replacement powdered stevia if you prefer)
3 Tbsp cream cheese (softened)
1 tsp vanilla
1/4 cup heavy whipping cream (you can add more to reduce the drizzle to a nice consistency (you can always add more but you can't take away so go slow)
Drizzle over the tops of the rolls and voila, all you need to do is give the icing a little time to set up.
That's all there is to it!
