Paksiw is a traditional Filipino cuisine which is very popular in every home. It's a simple dish yet healthy since it uses natural ingredients. Paksiw is a dish simmered in sukang tuba or coconut sap vinegar. Vegetables are also added.
INGREDIENTS
3 Slices Fish
1/2 cup Sukang Tuba | Coconut Sap Vinegar
Eggplant
Okra | Lady's Finger
Salt
Onion
Garlic
Ginger
Bell Pepper or Finger Chilli
Tomatoes
Black Peppercorn
PREPARATION
Wash the fish and slice the ingredients.
HOW TO COOK
Place all spices (except the bell pepper) in the wok or casserole.
Add the fish and vegetables. Add the vinegar and salt to taste.
Cover and simmer in medium heat for 30 minutes (or you can extend to 45 minutes in low heat)
When almost cooked, add the red bell pepper. Cover and simmer for another 5 minutes.
Done! Enjoy it while it's hot.
