The same friend who gave us yellow mangoes on my previous post has again showed his generosity by giving us singkamas and pipino taken from his wife's farm in the province.
Singkamas also known as Jicama or Mexican Turnip is a root crop which has a white crunchy and juicy sweet flesh.
The only edible part of the plant is the flesh of its bulbous roots. So dare not to eat even the light brown skin since it's poisonous! But wait, the flesh is packed with nutrients! Aside from fiber, it is a good source of Vitamin A, B and C. It also reduces the risk of hypertension.
It is usually eaten raw, just dip in vinegar with salt. Though many chef include them in their dishes.
Pipino or cucumber is equally nutritious. It contains antioxidants as well as a good source of hydration. Some people include them in their weight loss diet. It also lowers risk of hypertension.
Wow, healthy vegetables for me to eat! While they are still fresh, they are best to be eaten right away. So I made them into a vegie salad.
INGREDIENTS
Singkamas | Jicama
Cucumber
Onion
Red Bell Pepper
Tomatoes
Ginger
Vinegar
Salt and Pepper
Sugar
PROCEDURE
Peel and slice the Jicama and cucumber thinly.
Chop the spices into small bits.
Just mix all the ingredients,, add salt and pepper to taste. Add a pinch of sugar.
And Tada! Our healthy vegetables salad is ready.
You can munch them while watching your favorite movie or you can pair them with grilled fish or meat for your dinner.
