My original plan was to share in this community my weekly meal plan. I realized that I really do love cooking food that are healthy and easy to prepare, as I have shared in this blog, Easy to cook lunch plate | Gimbap and Cabbage Pancake. However, reality hits me, time is a very luxurious resource. I can't cook the food that I want to eat, all the time. I still try to make time planning my meals and making sure I eat healthy, that's why I'd like to share this compilation of healthy food bowls I was able to make for the month of November.
Last month really went so fast for me, I was going to work most days of the week that I barely noticed that we're now on the month of December (my birth month! ☺️). Even though last month went like a blur, I was sure that the few times I've spent cooking really made me happy and had given me a happy stomach. Hahaha. So here goes...
Beef and vegetable stir fry
When I say healthy, I meant a lot of greens, a bit of protein and fat, and a portion of carbs. I really don't like following a strict diet of cutting of the carbs and loading with too much proteins and other forms of diet. I would like to enjoy the food that I eat, plus the best advice a friend gave me was, do not hate on carbs. Hahaha. I don't think it was something profound but what I got from it is that a healthy diet means we consume the right amount of those macronutrients.
For this bowl, I stir fried beef, red bell pepper, oyster mushroom, napa cabbage, and bok choy. I seasoned it with soy sauce and pepper that suite my taste. And just like that, lunch was served!
Vegetable stir fry
This bowl was served with the tuna scrambled egg following this, since I make sure I got the greens and protein at the same time. One of the vegetables I never really liked are beans, specifically the green beans, it has that weird taste for me. However, my momma used this french green beans one time and I loved the taste of it. It has that subtle sweet taste especially when stir fried. I made this bowl using napa cabbage, french green beans, and onion leeks.
Tuna scrambled egg
This dish saved me during college years! Hahaha. Even though I was given enough monthly allowance, the occasional dining out with friends and lack of time didn't allow me to cook leisurely. I would usually stock up a can of tuna and have it for my breakfast and lunch. How? I would divide it into two portions, the first one I would eat with rice for breakfast, and the remaining, I would add an egg and scramble the whole thing. When you combine canned tuna with scrambled egg, it becomes very savory. Maybe it's just me since this was a staple food for me back then but do try it too. :)
Bitter gourd and egg stir fry
My childhood was mostly my parents forcing me to eat vegetables because I only keep eating chicken. I never really liked vegetables back then and I'm amazed on how my food preferences drastically changed when I left home. I craved for vegetables more than any meat. From time to time, I would cook this recipe and be reminded of my momma's cooking, she's really great!
This recipe is very simple too, you just have to sauté garlic and onion, add diced tomatoes, add the sliced bitter gourd when the juice ooze from the diced tomatoes, and lastly, add a beaten egg and mix until cooked. From watching dozens of preparing weekly lunch boxes from a Japanese content creator, I was inspired to add strips of nori to this bowl. Hahaha.
Kimchi fried rice
Last but definitely not the least! Kimchi fried rice! I have made variety of this dish, which only depends on the toppings I'll use. This time, I made extra efforts in stir frying ingredients that I will topped for my usual Kimchi fried rice. You can just go with a fried egg when eating this but I added a slice of ham, fried some eggplant, and blanched spinach to go along with the fried egg. It was extra delicious! If you have the chili pepper paste that can be bought from Korean stores, you can also add a spoon so you can enjoy this extra spicy. :)
That's everything for the month of November, I did cook more than this bowls but I was already too hungry to document it hahaha. I hope you got something new from this that you can try too.
