It's been a while foodies, I trust we have been making new recipes with delicious content.
For today I have been able to make 3 meals for today specifically for my elder cousin who is a nursing mother.
Here in my culture, a nursing mother doesn't eat everything especially in the first few weeks of the delivery. Their food is meant to be very soft and more of liquid and veggies.The liquid must be hot to heal wounds and the veggies and fruits to repair tissues. Also a nursing mother is meant to be on a good diet in order to replace lost blood and also to produce enough breast milk for the baby.
So for breakfast I made banana pudding popularly known as oto mboro in my tribe. The delicacy is made up of banana that is being grated and cooked in a very succulent way.
Here are the ingredients for mine
Native banana; this particular banana is bigger in size than the normal banana you know. This is the
Basic component of the meal.Fish or chicken or beef(it's optional)
Seasoning cubes
Crayfish
Salt
Vegetable leaves
Palm oil
Periwinkle
Procedure:
Water is added to the pot alongside fish, crayfish, seasoning cubes, salt etc. After it has boiled for a couple of minutes periwinkle is added and the banana is added into the mixture in little scoops.
Thereafter your spatula can do the shredded work in the pot to make sure that there is no lump in the food. Palm oil and vegetable leaves are then added finally and served hot.
It was lunch time and I decided to make rice and pepper soup. I got the chicken from the nearest poultry and prepared it. I killed the chicken myself, de-feathered it and butchered it. I also marinated it making sure that the seasonings got into the flesh of the chicken.
I also made soft white rice to accompany the pepper soup I made spiced with scent leave and clove.
Then for dinner, I made vegetable sauce with shredded chicken. I used palm oil for this sauce because of the flavor. I wanted it to have a little native taste and the sauce went down so well with rice.
This was what my whole day was made off. Cooking rush from morning till night, I just had to leave everybody's tummy smiling today.
