Coconut rice pudding is a traditional dessert of Latin American gastronomy in general and Venezuelan in particular. I remember those weekends with my grandmother cooking this delicious traditional recipe from my country.
Usually this dessert is usually prepared using cow's milk, but as you have seen in my previous publications I have developed my life as a cook specializing in dairy, gluten and sugar free food to support that part of society that suffers from difficulties to digest these elements, especially children with autism, a population sector that requires a nutrition specially focused on this type of recipes.
But beyond its absence of gluten, sugar and animal milk, this delicious dessert is also designed for the whole family, so it can be enjoyed without fear of possible consequences and expecting a rich flavor. Likewise, the coconut rice pudding has a soft texture similar to the curly but sweet, it can be eaten either hot or cold, and always accompanied with a layer of cinnamon powder.
Without further ado, let's get to work!
Ingredients:
- 1 Liter of coconut milk.
- Shredded coconut.
- ½ kg (or 2 cups) of rice.
- 1 and a half liters of water.
- 1 cinnamon stick
- 2 tablespoon cinnamon powder.
- ¼ teaspoon of salt.
- 200 grams of granulated stevia (or the sweetener of your preference, for example bee honey or agave).

In a container or pot we put to soak in water the 2 cups of rice for at least 6 hours; this step is important since it will help to activate the starch of the grains during the preparation process.
After the soaking period, remove the water from the rice, add one liter of water again and start cooking over medium heat.

Once the water is almost completely reduced, add to the rice the coconut milk, the grated coconut, the sweetener of your preference and the cinnamon stick distributed in small pieces in the pot. Stir for a couple of minutes and wait for the mixture to thicken until it has the appearance of curls.
Do not let the rice dry, once you get the consistency we want, remove the pot from the heat, wait for our dessert to reduce its temperature a little, serve in a glass, decorate with cinnamon powder and ready, to taste our delicious coconut rice pudding.
