Hello foodies... Here to share a recipe to make cakes with a pot and few gravels and what is more instead of plain flour- a healthier substitute (whole wheat flour).
Funny how I came about discovering this substitute on my own, was when the white flour at home finished and was longing so badly for a snack on a Saturday morning. Standing and looking around the kitchen contemplating on a snack to make then I saw the whole wheat flour that was bought and used solely for tuwo/semo/swallow as is fondly called in Nigeria. Which is usually eaten with any type of soup as shown on it's packaging.
I browsed to confirm the difference between the two and discovered this...
*One key difference between whole wheat flour and plain white flour is the fibre content. Whole wheat flour naturally contains the level of fibre found in wheat. Plain white flour on the other hand, has been stripped away of all of the fibre in wheat during the white flour production process.
Cake recipe
100grams of whole wheat flour
One table spoon of baking powder
25 grams of baking margarine
5 tablespoons of sugar
30ml tin of whole milk
Two large eggs
A quarter glass of water
STEP ONE ( Mixing the margarine and sugar)
In making cake this is the most important process to achieve a fluffy and soft cake. The mixture of butter and sugar till you achieve a less dense and lightweight increase in volume mixture.
First you pour the 25grams of margarine into a bowl and add four tablespoons of sugar into it then stir in a clockwise or anti-clockwise manner. Though in your choice of which ever way to stir -choose and stick to either one till the end result of a fluffy butter-sugar mixture is achieved as shown below. P.s my hands ached. If you have the machine - go right ahead.
STEP TWO (Mixing the dry ingredients and the butter-sugar mixture to it)
Mix the powdery things in a bowl first (The 100grams of whole wheat flour, a table spoon of baking powder and 1 tsp of granulated sugar) then making a hole in the middle of the flour with a scooping spoon, pour in the butter-sugar mixture into it then rub in the margarine with the flour mixture till it is granulated and smooth as seen below:
STEP THREE (Mixing the liquid ingredients with the whole grain flour mixture)
Making a hole once more in the middle of the whole grain flour mixture.
Pour in a tin of liquid milk, half a quarter glass of water and the two eggs then mix checking it's consistency, if dry keep adding water and if watery add some whole wheat flour.
Knead the flour till it looks like the picture below:
STEP FOUR (Placing the pot and already washed gravel in the pot)
After lighting the stove or charcoal, you place your pot on the fire and pour in the gravels or small stones as seen below. To make an even more soft landing you can line the pot with papers atop the gravels. Then place the cake mixture already put in an already butter-greased bowl of which form you would want the cake to take.
It took 45minutes for it to be well done as I checked its readiness with a fork (if it is ready it will come out clean and if not ready it had sticky flour mixture on it).
Trust me when I say it doesn't look as yummy as it tastes.
It was yummy and excessively filling. A lovely snack on the go and what is so much more healthy.
As a former ulcer patient. After having consumed it, I noticed that the pain or headache that comes with eating other snacks without eating a hot meal (as my body's way of saying ‘eat something better’) didn't resurface anymore. Then I knew I have found a new and beautiful substitute for a healthy snack.
My mum returned and was sceptical about trying it out but when she did - she finished it up😢😅

Fibre is an integral part of your diet because it prevents constipation, helps control blood sugar, reduce the chances of getting heart diseases, and helps manage weight loss.
