Moi moi, which is known as beans pudding in English is a popular Nigerian food that is a favorite of most Nigerians. It is made from beans and ingredients like cooked egg, mackerel, pepper, crayfish, onions, seasoning cubes, vegetable oil
It takes about 90 minutes to cook. If it is not well cooked it may make you purge. So, it's always better to be patient and ensure that it is well cooked.
The major ingredients needed to prepare moimoi are black eyed beans or honey beans, red bell pepper, scotch bonnet, onions, vegetable oil, crayfish, boiled eggs, cooked fish or liver, salt.
The first step to take in the preparation is to soak the beans for about an hour. The specie of beans you are using determines the extent to which you will soak it. Peel the beans when you are sure that it is soft enough. Afterwards, blend the beans, red bell pepper, scotch bonnet, and onions in your blender and add enough water to ensure its smooth and not too thick. Now mix the puree with the remaining ingredients, that is, crayfish, seasonings, salt except the eggs and fish or liver. One important step that you should not miss is to put a stick, foil paper, leaves or anything you deem fit on the base of the pot to prevent the moimoi from burning. Pour your puree inside a can, nylon or leaf and carefully arrange inside the pot. Cook for about 1 hour till its done.
It is often eaten with bread, pap, cassava flakes and it can be eaten alone.
