In this recipe blog I will share to you the recipe that I discovered recently and it's called egg mayo rolls. It is easy to prepare and cook. It's affordable and it's also good for snacks. It is also served as my entry on Hive Top Chef competition for this week.

Ingredients:
Boiled eggs
Mayonnaise
Cheese
Onion leeks
Lemon juice
Salt and pepper
Sugar (optional)
Lumpia wrapper
Cooking oil
You can also add some vegetable like carrots , bell pepper , celery and onion if you like but for me I preffered not putting any vegetables.
I used two kids of mayonnaise here, the Danes mayo with siracha and the Eden mayo with cream cheese. I love this mayo that's why I decided to put it both in this recipe but you can use any mayonnaise for this recipe.
This is a lumpia wrapper that I bought in the market but if you preffered the wrappers in the supermarket that looks so neat and clean then go 🙂
This is the onion leeks that I bought a couple of days ago with my tofuyaki recipe. I decided to plant it instead throwing it and look it's alive ♥️
Let's do the preparation.
Mashed the boiled eggs using your preffered equipment. As for me I used fork only because we don't have any equipment for mashing.
This is my preffered texture of the egg.
Add the mayo and chopped onion leeks.
Squeeze some lemon juice. Just make sure to squeeze little by little to avoid the sour taste.
Add some salt , pepper and sugar (optional)
Mix it thoroughly until the ingredients are well combined.
Cut the cheese into stick because we will add some cheese on the egg mayo later.
Wrapping time!
Put your desired amount of egg mayo in the lumpia wrapper and also put some cheese. It's up to you if you want to put a large amount of cheese on your recipe.
Repeat the step of wrapping until you finished your desire amount of egg mayo rolls. Since I only use two boiled eggs for this recipe, I manage to make six egg mayo rolls.
Frying time!
Put an oil into the pan and put the egg mayo rolls into medium heat.
Flipped on the other side once the egg mayo rolls turned to golden brown
Drain the egg mayo rolls before serving to removed the excess oil.
