Before I start my blog I just want to say that my recipe is not a common recipe for other people as some people is not comfortable on eating pork blood but for us Filipinos this is part of our common recipe here but not all Filipino are eating this recipe because of some reasons.
My recipe is called Pork blood stew or Dinuguan. Here in our province we called it Tinumis. There's a different ways of cooking this recipe like on our province we preffered to add some baby tamarind leaves for added sour flavor but on this recipe I used vinegar.
Pork blood stew reminds me of celebration. When they are cooking lechon they will removed the blood and intestine and then they cook the pork intestine and blood as pork blood stew. Pork intentine can also be cook like this and it's really good but then again not all people appreciate it as some people consider it as an exotic food.
Let's start cooking!
Here's the ingredients that we needed.
We need some pork sliced into bite size. A pork blood and spices like pepper corn , laurel , onion, garlic and salt. In the photo of pork blood I already add the laurel , peppercorn, vinegar and salt before cooking.
Cooking time.
Add some water and fatty part of the pork in the pan and let the water evaporate and the fatty part of pork will release some oil and that's the one I will used for the saute.
When the oil released you can add the pork meat and wait until it turns brown and toasted. Add some onion and garlic for saute.
Add the pork blood with spices and let it simmer until the pork blood became thicker.
Turn off the heat and serve.
