Today I want to share a recipe for a delicious lizard soup that I will prepare and that I have shared with my loved ones on many occasions. I like soup, I try to make it once a week with different ingredients, my mother accustomed me to eat soup since I was a child, she said it was important for the body, to consume that broth which helped to have a good digestion, it was accompanied by different vegetables that provide nutrients to our body. I remember the first time I made a soup, I had the help of my mother, she had patience to teach and it is not easy to get the food right the first time, I was lucky to inherit a little of the seasoning of my two mothers and I added my personal touch, sometimes I did not get it right, but it was not a reason to continue learning and improving the techniques I needed.
Preparación-Preparation
To prepare the soup we need a good lizard meat, jojotos, vegetables (auyama, yucca, celery, chaco, ocumo), plantain, vegetables (chili, paprika, onion); branches (parsley, cilantro, chives), dried oregano, garlic and bay leaf.
Para empezar nuestra preparación lavamos bien la carne; luego la picamos, se coloca en una olla con un poco de agua agregamos los vegetales y los jojotos, tapamos y esperamos que se afloje la carne.
To begin our preparation we wash the meat well; then we mince it, place it in a pot with a little water, add the vegetables and the beans, cover and wait for the meat to loosen.
When we are sure that the meat is loose, add the vegetables and add a little more water, cover again until it is cooked.
Before turning off, place the branches and plantains chopped in small portions.
Once our lizard soup is ready we prepare to serve, we can accompany it with cassava and avocado portions, you can not imagine how I enjoy preparing this dish that reminds me of so many happy moments, my mother loved this soup, so every time I prepare it I imagine that she is here sharing this moment that undoubtedly are important in our lives.
