Today I want to share with you a delicious dish of our country, such as the pabellón criollo which is composed of several ingredients: shredded meat, rice, black beans and fried plantains. In our homes it was normal to prepare this menu and share it with the family. I remember that in my family's house the beans were placed in a pressure cooker so that they would soften faster. As for the meat, they made sure that it was very soft so that it could be larded more comfortably. After all the ingredients were ready, we sat at the table to taste this delicious dish prepared by our mothers. Every dish I prepare brings with it beautiful memories of my loved ones, I was taught that cooking should be done with love and it is true, I am grateful to God for the teachings of my mothers whom I will always love.
Preparación-Preparation
For the preparation of the pavilion buy in the market black beans, which I left in soaking approximately 12 hours so that they loosen faster and also avoids that we fill us with gases when consuming them. We change the water and place it in the kitchen stove for approximately das hours until the grains soften.
Para su preparación se debe picar los aliños como: cebolla y ajíes, después sofreír bien en el sartén con un poco de aceite. Cuando se ablanden los granos agregar sal, papelón y el sofrito.
To prepare it, chop the seasonings such as: onion and chili peppers, then fry well in a frying pan with a little oil. When the beans are softened add salt, paprika and the sofrito.
Se lava bien la carne y se coloca en una olla para cocinarla agregándole un poco de sal. Cuando se ablanden se saca del agua, se deja enfriar para luego es mecharla.
Wash the meat well and place it in a pot to cook it adding a little salt. When the meat is tender, it is removed from the water, let it cool and then it is larded.
To prepare it, chop onion, chili peppers, garlic, cilantro, parsley and chives. In a pot add the seasonings to be sautéed. Then add the meat with a little water and let it dry and then turn it off.
In a pot add 2 cups of water when it boils place the rice with a little garlic and cover until all the liquid is consumed and fry slices of plantains.
