Hello dear readers, I want to join this ecoTrain contest this week, because I really liked the topic to be discussed, for my part I have always liked cooking, I use many spices and my preparations stand out because I use many vegetables and vegetables, certainly my wife cooks at home, but on weekends the kitchen is mine, as a general rule I always prepare stews on Saturdays and on Sundays we have soup, It is already a tradition, but sadly I could not participate in the previous delivery, so today I want to show you a salad that my mother prepared for me when I was young, this made me take a taste for vegetables, I could not name it but I will show you a little how my mother made it, although I excluded several ingredients and left the ones I really like.
For the preparation I thought a lot, to choose the best ingredients that my mother used and combine it with some of my liking and personal taste, for her, I only chose 10 ingredients, these individually provide many benefits to our health, first I will name the common ones, I used potato, onion, tomato and beet, and as an extra I added these that provide great benefits to our health, starting with spinach, this nourishes us with large amounts of vitamin A and C, apart from the vitamin content is an antioxidant and also has a high mineral value, which helps us reduce blood pressure and is also a natural stress reliever, I use it a lot to prepare my stews and soups, but in this salad could not miss.
I also added chard, this vegetable brings a lot of value to our gastric system, as it is rich in fiber and vitamins, without leaving aside its delicious flavor and if you want to nourish your body with omega 3 and flavonoids, this is the best way because it is natural and you can use it in any preparation, not just salads.
One of the ingredients that I could not add to this preparation because it is difficult to find in my country is the gherkin, this was used by my mother and I had to replace it with the common cucumber of my country, who is not far behind in its high water content, this is beneficial for weight loss and to give it the magic touch that I love since I do not like vinegar I will add lemon juice, it is too much to mention how good lemon is for our health and the benefits it brings us.
For the preparation is something simple, nothing complex, for my part first I boil water and cook the beets and potatoes, while these are cooked well I get down to work and start by washing the vegetables well, I select the leaves that I like and to my eye look appetizing spinach and chard cut into julienne strips, I also cut the onion, tomato and cucumber in slices, since it is the form that seems to me more simple and pleasant to the sight, after the potato and beet are well cooked I remove the shells and I cut them into large squares and with this, you have all the work ready.
As simple as adding all the ingredients in a bowl and stirring, for my part, I added a touch of oil and honey, since the latter will give this sweet and sour touch so pleasant to our palate.
I tried to make it as understandable as possible, and I know that with my explanation anyone can prepare it, or simply take the ingredients to your taste and start combining flavors and textures, I hope you like it and are encouraged to prepare this salad.
