, to encourage us to cook healthy foods, which in addition to being rich in nutrients are so important in our diet, as is the case with vegetables, tubers, cereals and grains ... we must also remember that we are what we eat; Therefore, an intake of nutritious food will help us maintain good health and a well-strengthened immune system.
Today I want to share with you a beautiful recipe that combines a variety of vegetables, which together form a beautiful dish full of flavor and colors, I mean this time "vegan potato gnocchi", which I will accompany with a delicious tomato and basil sauce ... All a healthy delicacy !!!, These gnocchi are a type of Italian pasta, cylindrical in shape, with small marks, which are traditionally made, this pasta made with potatoes, however, you can make them with another vegetable, grain or tuber of your preference (spinach, chickpeas, pumpkin, among others) ... this pasta is always accompanied with a rich sauce of your choice, (tomato, pesto, vegetables) or whatever you want .. . this dish It is a healthy, tasty and very economical option.
You will need the following ingredients:
For the gnocchi:
-1/2 kilo of potatoes.
-75 gr of wheat flour.
-A pinch of salt.
preparation:
First you need to boil the potatoes, until they soften; then you peel and mash them with a potato masher or a spoon until they form a puree.
Then integrate the puree with the flour and integrate with your hands until it forms a homogeneous dough, make long cylinders the width of a finger and take half an hour to the fridge.
Finally, cut the cylinder into portions of approximately 2 centimeters and with the help of a fork give the characteristic marks of this pasta and cook in a pot with boiling salted water, until they float, this pasta cooks very quickly for approximately 3 to 4 minutes .
For the sauce:
-3 tomatoes.
-Armatic herbs (basil and oregano).
-Salt and pepper.
-2 tablespoons of oil.
Chop the tomatoes into small cubes, take to a pot with the two tablespoons of oil, then add the aromatic herbs (chopped basil and oregano), adjust the salt and pepper and let this sauce cook for 10 minutes over medium / low heat, so that all the flavors are integrated.
When having the gnocchi cooked, I personally seal them for a few minutes in a little oil and add the sauce to impregnate them with its spectacular flavor ... for my part, I add some basil leaves and a beautiful rose with the bark of the tomato…
