to promote healthy cooking, today I present a delicious and super easy recipe of a potato roll, stuffed with corn and zucchini.
I make this recipe to take advantage of these beautiful vegetables that I bought in the market, and to take advantage of all the nutrients they provide us.
You will need the following ingredients:
• 1/2 kilos of potatoes.
• 1 medium zucchini.
• An ear of corn.
• A branch of parsley.
• 2 tablespoons of oil.
• Salt and pepper to taste.
preparation:
First you must bring the potatoes to a boil, then mash them and make a puree, add the chopped parsley, and you will season with salt and pepper. ( Reservation).
Next, cut the zucchini into cubes and peel the corn on the cob, place in a pan in a little oil to fry, adjust the salt and pepper and let them wilt a little, when they are ready to reserve.
Now that you have your mashed potato, spread it on a plastic kitchen paper and place the sofrito of corn and zucchini on top, finally roll up little by little and wrap the potato roll with the plastic, let it rest for two hours and that's it! !!
