We made my dad these healthy raw vegan chocolates for Christmas. The marzipan is made only from ground almonds, almond essence and dates. I tend to mix and match the date amounts till it has a marzipan texture as the amount of dates to almonds really depends on how moist the dates are, once made you just make them into little patties then coat in either raw chocolate or dark chocolate and top with a nut.
Dates are one of the only sugars that are suitable for diabetics since they have the fibre with them, obviously follow doctors advice ! But they are a great and healthy way to sweeten raw cakes.
