Hi guys, so it's my little brother's birthday today and he has been loud about it for a while lol. To celebrate his day...we made plans for cake and a little family thingy. I picked up the cake you see above...went to get groceries and other stuffs.
For food, he wanted fried rice but I really didn't have the strength for the chopping of the extra things...not after walking around trying to get groceries. So I decided on Jollof-rice and fried chicken...which is a bit easier.
There are different kinds of Jollof rice...or should I say there are different ways you can prepare Jollof rice. The one I prepared today is what I call Fish Mix Jollof-Rice.
Ingredients
- Fresh fish
- Tomato paste
- Vegetable oil
- Rice
- Onions
- Spices

So first I parboil the rice, I like to do that a lot...some do not actually, choices vary. I mix the tomato paste...had the onions chopped already and spices ready to go. Also, there is the fresh fish which I already steamed a bit with spice in it and of course the water used from steaming the chicken.
After parboiling the rice, I removed the rice and put back the pot on the cooker. Then added vegetable oil and waited for few seconds for it to get hot. After which I put the fish in the already hot oil to fry...hmm, not too fried though. Then I added my onions and tomato paste with few seconds apart.
Following this, I added the water from the chicken, then the spices necessary and also add a little more water then leave to boil....after which I add the parboiled rice. Then leave till it is soft or half done..depends on you.
So here I have Fish Mix Jollof-Rice, you may not see the fish the photo but when eating you would see it and also the taste of the fish gives a plus for the meal.
Don't mind how it is served, I was too tired to get it done for a nice shot. 🙈
