Meatfree Monday's supper was out of the jar.
While I am always more than happy to sell all my wares on a Saturday, there are times I secretly hope that I don't. This Moroccan lentil salad is a good example. As I said on Saturday, it is a delicious winner and, I think, will soon join the growing list of (versatile) plant-based favourites.
Because the weather had turned cold (again), I served it on cumin-roasted sweet potatoes.
I think it would work equally well, if not better with couscous.
For dessert: the gift that keeps on giving. Homegrown stawberries that are more abundant than we have had in years. It's making me consider stashing them to make a small batch of jam...
