A few days ago, it was the mooncake festival and my mom was busy making them. Not for sale but for self consumption as well as to give to friends and relatives. Mooncake consist usually of two things; the skin and the filling. The skin is the toughest to make because you've got to balance out the ingredients. There are many stores here in Miri where you can go and buy these paste. There are different type of paste from pandan, lotus to even durian. My favourite definitely is chocolate paste.

The mooncake filling

Green tea paste

Green tea paste. Mooncakes consist of 80% filling and 20% skin. So it's like eating dessert.
My mom makes them every year so we usually do not go and buy any mooncake. We are given boxes of mooncakes. From the above, yam paste, chocolate and green tea paste. It's made into round balls to be easily inserted into the skin later on.
The skin

Some flour and butter. She doesn't make those baked mooncakes. These are more like dessert mooncakes. Like eating cakes.
Rolled into long dough shape.

Then cut into equal section. The colours of the different skin derives from food grade colouring. This is for easy identification of the mooncake according to their different respective flavours.
After the skin is done

The skin is kneaded into round flat pans and the paste is placed inside. Then there is a mooncake maker. Place the whole dough and filling into this maker and press on it, and you've got your mooncake. For baked ones, you'll have to place them into an oven to bake at a certain temperature to get that beautiful brown texture.

Placed into each individual plastic containers and into a box. That box can easily be found in any bakery ingredient store locally. Different flavours with different skin colours. Every year, my mom makes them to give away to relatives and close friends. She used to sell some of it but I guess, these days, she's busy trading crypto.
