Mango is one of my favorite fruits. I suspect its the same for a lot of us. No wonder its called the king of fruits. From ice creams to candies to juices to smoothies to cakes to the fruit itself. Its probably the most versatile fruit. Or should i say we love it so much that its our ingenuity that has ensured we can stuff this into almost anything now.
To day i am going to show you a recipe for Aam Papad or Mango Candy. This was quite popular when i was a kid. I used to wait for summers to come so that my mom would make it at home. You should order one online one of these days. Believe me you wont regret it. These days the kids love chocolates and stuff like that more. Sigh! The good ol' days !
Mango also has a host of benefits like fighting cancer, weight loss, fibrous, Lowing Cholesterol and regulating diabetes. However most of us eat mangoes simply because it tastes yum ! While in a candy form you can add sugar. If you pick really sweet mangoes you can skip the Sugar. Mango candy in the non-sugar form is actually as healthy as eating the mango. It is a great way to fulfill your sweet cravings without hurting your body ;)
Ingredients
2 sweet ripe mangoes chopped
1-2 tbsp Sugar - (Depends on the mango Sweetness)
1/4 tsp cardamom (Optional)
2 tbsp Ghee / Olive oil/ Unsalted Butter
The Recipe
Use a mixer to pulp the mangoes with the sugar without water.
Transfer the pulp into a pan on low flame and cook.
Keep cooking for atleast 30-40 mins. Keep stirring non stop
When it reduces add the cardamom powder. Keep Stirring.
Take a steel plate without edges and brush the ghee liberally on the surface.
Spread the pulp evenly across the plate.
Leave it in the sun for 2-3 days.
Gently peel the Aam Papad out and roll them up.
Enjoy them as they are or use them as slices in sandwiches for kids.
You can also store them for a month in a air tight container.

That is the recipe for Mango Candy or Aam Papad. There is a more traditional way where mango is simply pulped and then spread openly under the sun.Now that has a different flavor. But in today's instant world that would be too long for many. But if you want to try it, Simply pulp the mango and spread it in a plate as above and leave it in the harsh sun for a couple of weeks. There the candy is ready !
