Wow, I did not visit my Aunt for 2 Saturdays!
After missing in action for two Saturdays, finally I was back to visiting my Aunt. Usually, the aftermath of hourly tube-feeding my son due to his temporary complications left me totally worn out. However, I could safely said that I was back to normal strength beginning of the week.
By the way she greeted us, I knew she missed the boys. In normal days, she would take prepare the food on the table for me, but this round, she went to the room and chatted with the boys first, while also hanging around with the boys playing some toys — asking all sorts of questions to ensure the boys were well.
Okay, let's see what had she cooked for us!
Potatoes and chicken cubes
This is basic Chinese stir fry dish. Never underestimate this dish. It was simple yet loved by many especially children. Basic stir fry by using ingredients such as garlic, onions, soy sauce and oyster sauce. This round, she added some chicken stock too. Aunt preferred to prior soften the potatoes first by streaming. So that it cut short the stir frying time. Basically, in a hot pan, heated up the oil, sautéed onions and garlic, added in the chicken, tossed and stir-fried till cooked, added in potatoes and mixed in chicken stock powder, soy sauce and oyster sauce. That's it! Super appetizing. She knew the boys love love love this dish.
Hakka Pork with salted vegetables
She cooked this extra dish due to cherry tomatoes on sales. How adorable was she. She did not want to just serve me the cherry tomatoes so she cooked a dish with them. I love Hakka dish, so I assumed she was thinking of me when she cooked this. Also a simple stir fry using ginger and onions, added in the pork slices and fried till fragrant, then salted vegetables were added, seasoned with some pepper and a dash of soy sauce and some sugar. A superb delicacy.
Herbal pork rib soup
She was wondering how we were due to yet another variant of Covid19 landed at our nation, so she boiled herbal soup for us to strengthen our lungs. It contained some herbal soups made from plants' root, the soup had its original sweetness from dried longan, red dates and goji berries. A very refreshing soup to drink which gave some warmth to the soul and heart. We all loved soup very much.
Too bad, we got to make a move quite soon because the sky was turning greying. My Aunt dislikes the idea of us being drenched by rain water, so she quickly packed the food and asked us to go home fast before being caught in the rain. Thank you, Aunt, for your loving kindness.
Husband came home late after a meeting outstation. I told him my cravings for one particular stall at Melaka which sells 'pohpiah' which tastes like home. He managed to find the stall and bought back four 'pohpiah' for us. These were special pohpiah with the many ingredients: stir fry turnips, pork lards, beansprout, eggs and pork belly. It tasted similar to my mum-in-law's poh piah. We ate the 'poh piah' for supper. Yums!
