Beets are provide many benefits for the body, below I will mention the most important:
The beet, like the rest of vegetables, is a food with great nutritional wealth and that provides multiple health benefits.
It helps reduce blood pressure levels, as well as the relaxation and dilation of blood vessels, which helps to improve circulation, contributing positively to blood pressure control.
Being a food with a high water content, it makes it rich in sugars and with a good supply of fiber, thus favoring the elimination of liquids due to its diuretic power.
One of the factors that most benefit from beets is its phenolic compound, which provide great antioxidant power, even after cooking.
It also helps with the body's defenses thanks to its high content of vitamin C, fiber and minerals.

Step-by-step elaboration:
To cook the beets you must first wash them and then cut them in half.
Put plenty of water in a pot and place the beets, potatoes and carrots there. Bring them to a boil until tender. To check it, prick with a sharp knife.
Once they are tender, remove the pot from the heat and allow to cool.
Drain and transfer to a bowl of cold water.
Once ready, let them cool and cut them into small squares, also cut parsley, add mayonnaise, mustard and salt to taste.
