Hungry!!!
Breakfast time! The kids need to eat, my stomach started talking already. If you know my kids, they can live with eggs and rice -- breakfast, lunch, or dinner! Lol.
Hubby is already at work. He is out of the equation.
How about me?
I thought I'd make oats porridge, but changed my mind. A quick check in my fridge and I found these -- flour tortillas, mozarella cheese, and beef mortadella.
Hmmm, what can I make of these?
There has to be something quick and easy to make from these ingredients...
Breakfast Ham Quesadillas
Quesadilla is a Mexican dish that is mainly flour torilla and cheese. There are lots of twists to it, you can add chicken, vegetables, or any other meat of preference.
I remember the chicken quesadillas I used to always order when we eat at Pizza Hut. What if I made chicken quesadillas? Hmmm, it will take longer.
Hence, I used beef mortadella. No need to cook, just add directly to the quesadilla. And hey, it's breakfast time, so we might as well add some eggs!
This is fairly easy. Check out the steps below:
- Beat an egg in a small bowl and add a dash of salt and pepper.
- Heat the pan and drizzle with a small amount of olive oil and then add butter.
- Pour the egg in the pan and let it spread in a round shape, quickly before the egg sets.
- When cooked, add place the tortilla on top of the egg,then flip.
- Add a generous amount of mozarella cheese and the beef mortadella slices at one half side of the tortilla.
- Flip the tortilla to close, and gently pat to let both sides stick together.
- Flip to the other side and wait for a minute and then take it off from the pan.
Breakfast is ready!
That's it! Breakfast is ready. It won't even take you 10 minutes to prepare this meal.
Carefully slice the quesadillas into three parts and enjoy!
