Pempek is a typical food from Palembang and is usually made from fish meat that is processed into food. However, this time I will share a recipe for pempek without using fish meat, curious how this pempek recipe is? Check out the recipe below to the end and follow it step by step. Good luck !
Well, the ingredients you have to buy and prepare are 5 chicken eggs, flavoring, garlic, green chilies, wheat flour with medium protein, rice flour, tapioca flour, brown sugar, tamarind, salt, cooking oil and the last one i.e. really boiling water. After you have prepared all the ingredients, now let's start the first stage of making pempek dough.
The first step, all you have to do is prepare 1 place and pour 250 grams of flour or the equivalent of 17.5 tablespoons, then add 5 tablespoons of rice flour and half a tablespoon of salt. Then stir the mixture until well blended.
The second stage, after the dough has been stirred until well blended, then add the boiling water that you prepared earlier and add a little flavoring to the dough. Then stir the mixture with a spoon until well blended.
The third stage, after the dough has been stirred until well blended, now add 2 tablespoons of cooking oil into the dough, then stir the dough again until the cooking oil is well mixed with the dough and is really soft.
The fourth stage, after the dough is really soft and not too hot, now add 1 egg to the dough, then stir until the eggs are well mixed with the dough. After stirring until smooth, let the dough cool for about a few minutes.
The fifth stage, while the dough is left to cool for a few minutes, now prepare the brown sugar and cut it into small pieces like the photo above.
The sixth stage, after you have cut the brown sugar into small pieces in the previous stage, now prepare a frying pan and pour enough mineral water into the pan, then add the brown sugar that you cut into small pieces before, put enough tamarind and half a teaspoon of salt. Then cook until the brown sugar and tamarind dissolve and boil over medium heat.
The seventh stage, after the brown sugar and tamarind have dissolved and boil, now strain until there are no remaining tamarind seeds.
The eighth stage, after you have filtered the brown sugar and tamarind, now prepare a blender and put 6 garlic and enough cayenne pepper to your liking, then add a little tamarind water that you have filtered. Then blend until semi-coarse, but if you want a smoother texture, you can also blend until completely smooth.
The ninth stage, after you have blended according to your wishes, now pour everything into the tamarind water that you have prepared, then stir until everything is perfectly mixed. Now the pempek seasoning is complete and we will continue to make the pempek dough.
The tenth stage, after you have made the seasoning for pempek, now we will add 500 grams of tapioca flour into the dough that we have chilled for a few minutes. Then stir the dough until it is well mixed using a spoon, spatula or you can use your hands to make it faster and more practical.
In the eleventh stage, the dough has been stirred until evenly distributed and prepare a place and beat 4 eggs in that place. Now we will fill pempek with eggs in the next stage.
The twelfth stage, after you have prepared the beaten eggs, now take a little dough and make a hole like the photo above. You can adjust the size of pempek according to your wishes.
The thirteenth stage, now pour a little egg that has been beaten into the pempek, then close the pempek again until it is tight so that when boiled the eggs do not scatter. Repeat step twelve and step thirteen until all the dough and eggs are done.
The fourteenth stage, after all the pempek has been filled with eggs to completion, now prepare a frying pan and pour enough mineral water and 2 tablespoons of cooking oil so that the pempek when boiled does not stick. Then heat the water over medium heat for a few minutes.
The last stage, after the water has been heated to a boil, now put one per glazed pempek that you filled with eggs before. Boil pempek for about 5 to 10 minutes.
And finally, after being boiled for 5 minutes, pempek can be eaten together with your family or friends. How to serve pempek is very easy, first cut it into several parts, then pour enough pempek sauce to your liking. Then you can also add cucumber slices to make it more delicious and tasty.
