Today I am going to tell about how to prepare "Malpua".
Malpua is one of the oldest Indian desert, it more than eight thousand years old history.
We get reference of Malpua in our RIGVEDAS, as "APUPA". RIGVADA is the oldest of our four Vedas. In Rigveda has talked about the recipe of Apupa. Generally it was prepared use of flour in form of flat cakes , deep fried in ghee and dipped in honey.
Malpua is popular in West Bengal, Odisha and Maharashtra. Generally it is being served during festivals along with other sweets.
Now I am going to tell you what are the ingredients required to prepare dry Malpua ( Pan cake).
1. White Flour ( Maida) - 1 cup
2. Semolina ( Rawa/Suji) - 1 cup
3. Sugar - 1 cup
4. Milk- 1and 1/2 cup
5. Funnel seed - one tea spoon
6. Refined oil - as per required

Process to prepare Malpua
First we have to heat milk then allow it to come down to normal temperature.
then we have to mix white flour, semolina, Sugar and Milk ( normal temperature) and keep as it is for 45 minutes.
Then we have to mix the solution very well, we can use hand grinder if required, the solution should not be very tight, if we feel that the solution is tight then we can add little bit milk or water as per required and make the solution dilute. But we have keep in mind that it should not be very diluted form. Now we have to add fennel Seed in to the mixture and the essence of it very essential for Malpua. Fennel seed essence is the speciality of malpua.
Now we have to deep fry the round shape Malpua. For that we have take refined oil as per requirement on pan then we have to heat oil, before we have to put mixture of malpua with the help of spoon, gas must be on sim, temperature of oil must be moderate. Now we have to deep fry the mixture of malpua by putting with the help of spoon. It will look like round shape and now we have to fry in slowly, temperature of oil must be medium other wise top portion of malpua will get brown but inside of the pua may not get fried, this thing we to keep in mind that flame of gas must be on medium. Here temperature is very important factor. When ever we put mixture on oil by help of spoon it will automatically take round shape.
Now we have to fry all by controlling temperature of gas.
Malpua is ready to eat. We have made it dry so that we can preserve it and we can eat latter on.
This sweet dish not only very tasty yammy to eat but highly nutritious food because it has Semolina, milk etc.
