Today is another self quarantine day for anybody.So I took another second opportunity to make another traditional Sinhalese sweet. Challenge accepted of my wife and I made some of this food with her guidance. I ate one of my hand made this food. It's good taste included. Few minutes ago me and my wife made traditional Sri Lankan food called Kokis. Kokis are not sweet. A type of food that is placed on the table for the Sinhala & Tamil New Year. I can't say enough about it's taste, because it has the strangest taste. (No Sugar added)
I already said, we have opportunity to learn new things within this quarantine. So I don't mind about my boring life only staying home. I really appreciate my wife's effort. Without her assistance I won't try it out cooking methods within my life time forever. Lot of children in my country eat Kokis because it hasn't tasty choice like milk toffees, chocolates, biscuits or cakes. Kokis has very similar taste some fried potatoes. But chili dust not insert to Kokis mixture. So let's go to the recipe of Kokis.
Ingredients
400 g of wheat flour and 100 g of rice flour
2 cups of coconut milk
1 Egg
A Kokis mold
Half a tablespoon of turmeric powder
Quarter a tablespoon of salt powder
Finely chopped curry leaves
Making method
Put the coconut milk into a bowl and add the wheat flour and rice flour to it.
In the bowl mix the turmeric powder, salt powder, egg and the chopped curry leaves.
Keep the mixture for about 30 minutes. Once the oil is heated, heat the kokis mold and mix it with flour.
Put the portion of the mixture that was added to the kokis mold into the pan. Then remove from the mold and fry for about 1 1/2 minutes.
I made only 10 kokis lol...My wife made at least 40 pieces. For make Kokis and Kevum we need to practice more patience for fight against kitchen's burning fire. Now you can see butterfly shaped Kokis pieces we made few minutes ago. It's so hot yet.
