Traditionally, Filipinos love vegetable and we have a lot of mixed veggie dishes all over the archipelago. We have the Pinakbet of the Ilocanos or the people of the northern part of the Philippines. Pinakbet is sauted mixed veggies on soy sauce and fish sauce. We also have Chopsuey which is of Chinese origin, more like an influence of the Chinese when they bartered or traded their products with the native Filipinos centuries ago. Chopsuey is mixed vegetable dish sauted on oil.
Here in my region, in the Eastern part of Visayas (middle part of the country), we love coconut milk, thus, our mixed veggies dish is bathe in coconut milk. Of all Filipino mixed veggies dish, this is my favorite. We call this locally as, "lawot-lawot," which pretty much means mix-mix.
Lawot-lawot is a mix of local veggies like squash, camote tops, red basil, sweet basil, pepper leaves, taro shoots, pepper, onion, lemongrass, turmeric leaf, banana heart, string beans, ginger and anything you want to add like moringa or whatever you can find in the backyard. The aroma is so good because of the onion, lemongrass, turmeric leaf, and ginger. Of course, the base of the dish is the thick coconut milk.
