'Chakuli Pitha' is a rice-based fried flat cake. We call our traditional local cake 'Pitha' in our language. It's a very healthy and nutritious dish. You can take it as a main meal or as a snack. This pitha is originated in India and it got several variations. We call it 'Dim Pitha' locally; that means fried cake made out of the egg.
You can add different ingredients to make it spicy or even sweet. I like the spicy one but sometimes I also make the non-spicy one or add some sugar to make it sweet. Following this recipe is also very easy and less time-consuming. Also, it's not deep-fried, it only needs a minimum amount of oil. One teaspoon of oil is enough for a family-size meal. So as a lazy cook, I try to do this occasionally for an afternoon snack.
Here I'm sharing how I make it.
Take one cup of rice flour.
Add an egg, salt, turmeric, chili, onion slices, and some water.
It will look like this.
Make it medium thick.
Hit a pan, brush some oil and pour some mixture in it. Put the lead on.
Flip it and cook for two minutes.
Now you can roll it or just flip it in half or leave it as it is.
The best part of this recipe is you can add your own fusion. Like you can add tomato slices, ginger to make it extra hot, add more egg or even other vegetables to make it more delicious. You will find in our country most families have their own way to make it and it's all different. I really love to taste all the different recipes.
