Shahi Toast/Shahi Tukda, as the name suggests, is a royal dessert made from fried bread and melt in mouth Rabri. It’s an old, famous desert which is popularly served in a lot of Indian parties, restaurant buffets and wedding celebrations. It is a hugely loved sweet dish at the time of Ramdan (a popular Muslim festival). It is made by frying bread until crisp and golden and then dipping it in sugar syrup. The royal touch comes with the Rabri and sumptuous nuts garnishing. This dish is high in calories given its ingredients so must be consumed in lesser quantity although it’s extremely difficult to control given its heavenly taste.

Ingredients:
- 500 ml Full Cream Milk
- 4 slices of White Bread
- ½ TBSP Green Cardamom powder
- 1 TBSP Powdered Sugar
- Finely chopped buts (Almonds and Pistachios)
- Ghee for deep frying
- 250 Gms Sugar
- 250 ml water
Step 1: Pour the milk in a pan. Let it cook on a low flame until the entire liquid gets evaporated. It will take approx. 30 minutes for the milk to turn solid and granular. Keep stirring to avoid getting it burnt.
Step 2: Once them milk thickens, add the powdered sugar and powdered cardamom powder and keep the mixture aside. This milk mixture is called as Rabri.
Step 3: Take another pan and add sugar and water to it to make the sugar syrup. Let is boil for about 7-10 minutes will the mixture becomes a little thick.
Step 4: Now cut the ends of the bread slices. Heat ghee in a pan.
Step 5: Fry the bread slices in the pan until golden brown.
Step 6: Dip the fried bread pieces in the sugar syrup and let it soak for about 1 minute.
Step 7: Take 2 fried bread slices. Add the Rabri between them. Also add Rabri to the top of the bread slice.
Step 8: Garnish with slices nuts and serve hot.
