It's that time of the year again, one of my favourite time of the year! Christmas! I can't help but took an annual leave today because I needed to clean the house and prepped my roasted pork for my friends who will be coming over to celebrate Christmas eve together. This time round, I've only invited a few because I didn't want to overdo myself like last year. I remember last year almost half of my department came and I just couldn't have time for everything. The washing plates, cleaning and my house isn't that big to fit so many. This time, I've learned my lesson by inviting only 5 friends over. Just the cozy bunch.
Fun Fact : Did you know that around this time, I started picking up cooking and the first ever dish I made was the roasted pork. It turned out really well.
Can't believe I've been cooking for a year now and my roasted pork is like an annual thing for me. It's actually pretty simple to do but the process is long. Marination for one day, roasting for almost 2 hours and other things like making sure the pork itself is dry. The dryer the better for crisp.
This year, also baked some cookies to give to the whole office. She has been watching many baking channels and decided to go for something called Meringue Cookies. Basically a sugary cookie that melts in your mouth. Her cookies takes on a bear shape hugging a honey star cereal. Then she carefully wrapped them in a cookie letter to deliver to her friends. I think there's still some in the fridge!
I hope that everyone is staying safe and enjoying this festive season. Though it may be slightly different this time round, I hope that you remain jolly and well. Merry Christmas!
