Gheime Bademjun is an Iranian Dish and very tasty!
You probably haven't heard of it, if you are not familiar with the iranian cuisine. But it is super tasty and worth trying! Traditioanlly it is made with sheep meat, but you can also make it with tofu/soja. It consists of a yellow split peas which has to be soaked and then cooked, meat or tofu, egg plants, fries, tomatoes as well as rice.
As you can see these ingredients are often separated (who wants soggy fries?), but the egg plant slices are often mixed with the stew. You will find many recipes online, although I think if you would really want to try it you should watch a video as well as there are many small details that might get lost in a written recipe.
The rough outline is as follows:
- cook the rice with tah dig (this is the crunchy part on the bottom of the pot that can be made with rice, bread or potatoes)
- For the stew: yellow split peas and seasoning; add the meat or tofu later on. They sshould cook together for at least one hour
- make the fries and egg plant slices in an oven (it's easier that way and you use less oil)
- finally, fry/roast some tomatoes (halved or uncut)
This is obviously not a detailed recipe, but maybe you will be curious enough to do some more research ;) Normally it is also eaten with herbs (cilantro, basil etc.) on the side or also with an onion (which is of course quite a strong taste!)
