Thank you and it tasted really nice too, so I’ll definitely be cooking with this regularly as it’s one of the best ways to use my dried mushrooms. Honey mushrooms are very easy to identify, and they grow in large troops, a bit like oyster mushrooms. If you’re planning to pick honey mushrooms, make sure the spore print is white. There’s a very similar toxic species called Galerina marginata, and its spore print is brown.
I’ve experimented with them in sweet dishes too and they tasted surprisingly good, I think the combination of umami and sweetness works really well together or maybe it's just my taste buds. Lol.
How lucky are you to have oysters and chanterelles around there as both so nutritious. :)
