In the Caribbean, there is a delicious cocktail called "Piña colada". It's a drink that you can enjoy at any time, but it's even more delicious at the beach. This cocktail consists of blending pineapple with coconut and rum. This drink is served with ice, and you can drink several. The problem is that it is so tasty that you can get a hangover.
I wanted to go to a higher level, so I made a dessert inspired by this cocktail, but add some coffee. The result was amazing!
The first thing I did was chop pineapple chunks into small cubes. In a frying pan, I placed the pineapple over medium heat and cooked it briefly with a little sugar and a dash of rum. I turned it off and let it cool.
On the other hand, in the blender, I beat the coconut cream until formed a cream. To obtain this texture the coconut cream must be cold. You must place it in the refrigerator beforehand.
I wanted my dessert to be organized in layers, so I served it in a wine glass.
First, I placed some whipped coconut cream and then a slice of vanilla sponge cake. I had prepared this cake yesterday, but I wanted it to be part of this invention 🤣🤣🤣
On top of the cake, I placed the pineapple cooked in sugar and rum.
When I whipped the coconut cream, I reserved half of it and mixed it with 1 tablespoon of instant coffee. I put this coffee-coconut cream at the end of the dessert. You can garnish with a few pieces of pineapple if you wish.
When tasting the dessert the flavors are great, and the texture is very similar to tiramisu thanks to the creaminess of the coconut. It is a dessert with several textures since you can feel the pineapple pieces and chew them to release their juices.
Have you ever thought of mixing pineapple, coconut, and coffee? Maybe not, but it is one of the most fascinating combinations I have ever tasted. You can't leave out the touch of rum as I feel it enhances the flavors of all the ingredients in this dessert.
Coffee is very versatile. It can be a delicious cup of coffee or be part of recipes that can be surprising. It's just a matter of letting your imagination run wild.
